Bahan resep ikan lele goreng tepung :
- 1500 gram ikan lele segar pilihan
- 1 sendok makan ketumbar bubuk
- 2 sendok makan air jeruk nipis
- Minyak goreng secukupnya
- 1,5 sendok teh garam
Bahan pencelup lele goreng tepung :
- 1/2 sendok teh kaldu ayam bubuk
- 1/2 sendok teh baking powder
- 1 sendok teh bubuk kari
- 200 gram tepung terigu
- 1/2 sendok teh garam
- 30 gram tepung beras
- 400 mililiter air
Cara membuat lele goreng tepung :
- Pertama bersihkan bagian dalam lele, sayat bagian pinggirnya, dan cuci hingga bersih
- Kemudian semua bahan pencelup dicampur dan aduk hingga menjadi rata, lalu sisihkan
- Ikan lele yang telah dibersihkan dilumuri dengan garam, ketumbar bubuk, dan air jeruk nipis. Kemudian biarkan sekitar 10 menit
- Setelah itu goreng hingga setengah matang, angkat dan celupkan ikan ke dalam adonan pencelup
- Goreng kembali hingga betul-betul matang
Setelah ikan lele matang maka segera angkat dan siap dihidangkan. Resep lele goreng tepung ini dibuat untuk 5 orang.
Bahan Untuk kue ulang tahun;
- 6 butir telur
- 125 gram gula pasir
- 1 ½ sendok teh emulsifier (SP/TBM)
- 125 gram tepung terigu protein sedang
- 30 gram cokelat bubuk
- 15 gram susu bubuk
- ½ sendok teh baking powder
- 125 gram margarin, dilelehkan
- ½ sendok teh cokelat pasta
- 400 gram buttercream untuk olesan
Bahan isi :
- 100 ml susu cair
- 250 gram cokelat masak pekat, dipotong-potong
- 100 gram kacang madu, dicincang halus
Bahan toping :
- 100 ml susu cair
- 1 sendok makan madu
- 200 gram cokelat masak pekat, dipotong-potong
Bahan sirup (aduk rata)
- 2 sendok makan gula pasir
- 2 sendok makan air hangat
- 1 sendok makan esens rhum
Cara membuat Kue ulang tahun:
- Cake : kocok telur, gula pasir, dan emulsifier sampai mengembang. Tambahkan tepung terigu, cokelat bubuk, susu bubuk, dan baking powder sambil diayak dan diaduk rata.
- Masukkan margarin leleh dan cokelat pasta sedikit sedikit sambil diaduk perlahan
- Tuang di loyang diameter 22 cm, tinggi 7 cm yang dioles margarin dan dialas kertas roti
- Oven 35 menit dengan suhu 180 derajat celcius sampai matang
- Isi : panaskan susu cair. Matikan api. Masukkan potongan cokelat masak pekat. Aduk sampai cokelat larut. Tambahkan kacang madu. Aduk rata. Dinginkan. Kocok rata
- Belah 3 cake. Ambil selembar cake. Oles dengan bahan sirup. Oles dengan bahan isi. Tutup lagi dengan cake yang lain.
- Tutup cake dengan butter cream. Garis sisinya dengan penggaris segitiga. Dinginkan.
- Toping: panaskan susu cair dan madu. Matikan api. Masukkan potongan cokelat masak pekat. Aduk sampai cokelat larut.
- Tuang diatas cake sampai ke sisinya secara tidak rata. Dinginkan dan hias dengan buah buahan dan hiasan kue.
Bahan resep lele asam manis :
- 1200 gram lele segar pilihan
- Minyak goreng secukupnya
- 1 sendok teh garam
- 2 buah jeruk nipis
Saus lele asam manis :
- 4 sendok makan minyak goreng
- 2 sendok teh tepung maizena
- 6 sendok makan saus tomat
- 1 sendok teh merica bubuk
- 1 sendok teh pala bubuk
- 4 sendok teh gula pasir
- 2 sendok teh cuka masak
- 100 gram kacang polong
- 6 siung bawang putih
- 2 sendok teh garam
- 2 centimeter jahe
- 300 mililiter air
Cara membuat lele asam manis :
- Pertama peras air jeruk nipis, iris jahe seperti batang korek api
- Cincang bawang putih, larutkan tepung maizena dengan 1 sendok makan air
- Bersihkan ikan lele, iris pinggirnya, dan cuci hingga bersih
- Rendam ikan lele dengan air jeruk nipis dan garam, biarkan sekitar 20 menit lalu tiriskan
- Goreng ikan lele hingga matang dan garing lalu angkat dan tiriskan
- Untuk membuat saus asam manis maka tumis bawang putih dan jahe hingga tercium aroma harum
- Tuangkan air, saus tomat, pala bubuk, garam, gula pasir, merica bubuk, cuka masak, dan larutan maizena lalu aduk rata
- Teruskan memasak hingga saus mengental, tambahkan kacang polong, lalu aduk sebentar dan angkat
Bahan-bahan :
- 6 ekor lele ukuran sedang bersihkan, buang isi perutnya
- 500 ml minyak goreng
- 1 butir telur ayam, dikocok lepas
- 50 gr tepung terigu protein sedang
- 1 sendok teh maizena larutkan dengan 2 sendok makan air
- 50 ml air
Bumbu :
- 2 buah cabe merah dibuang bijinya, diiris-iris kecil
- 3 siung bawang putih, cincang
- 1 buah bawang bombay diiris tipis
- 2 sendok makan saus tiram
- 1 sendok teh kecap manis
- gula pasir secukupnya
- garam secukupnya
Cara membuat :
- Lele yang sudah dibersihkan dibelah dari punggung melingkar hingga terpisah daging dan durinya
- Lumuri lele dengan garam
- Kemudian gulingkan lele ke dalam tepung terigu hingga rata, celup dalam kocokan telur, angkat dan gulingkan kembali kedalam terigu
- Goreng lele ke dalam minyak yang sudah panas hingga kering dan keemasan, angkat dan tiriskan
- Saus : panaskan 2 sendok makan minyak, tumis bawang bombay dan bawang putih hingga harum, kemudian masukan sisa bumbu yang lain dan aduk rata. Tambahkan air dan biarkan mendidih. Tuangkan larutan maizena, masak sambil diaduk sampai mengental. Angkat, siramkan ke atas lele dan siap disajikan. Supaya lele tetap krispi siram saus ketika hendak disajikan.
